Welcome to my vegan kitchen!

Hello blog world!  I am so excited to be blogging about my most passionate subject.....feeding our children healthy, whole foods.  It is an uphill climb in our society to feed children compassionately.  At soccer games, birthday parties, restaurants, and the like, my children (like most) are faced with an array of daunting food options.....bright orange macaroni and cheese, partially hydrogenated crackers in the shape of cute fish, high fructose corn syrup drinks, etc.


On this blog, I would like to share what I am doing to feed my children right and also to teach them that healthy foods not only taste great but do our bodies right for the long haul.  Although my children do enjoy the occasional junk food, my son is currently munching on his favorite lego building snack....cut up organic apples!    And I just love it when my daughter/photographer begs me for kale chips smothered in nutritional yeast.  She has to fight me for them...seriously! :)




So, here is our first picture and post.   It is a chocolate smoothie and a bowl of organic, raw walnuts and cacao nibs.  A healthy, yummy breakfast that can be modified to fit any child's taste.  Change the nuts, add some seeds and/or dried fruit....make it your own.  YUM!



Chocolate Smoothie
In a Vitamix (or other blender), combine the following:
2 handfuls of organic spinach (or other green) 
2 cups of non-dairy milk of choice (we generally use organic rice milk from Trader Joes)
2 frozen bananas (my favorite smoothie sweetener...more to come about the AMAZING frozen banana)
2 heaping tablespoons of organic chocolate or cacao powder


Blend until smooth.  

These measurements are not exact.  Add more of any item to make it more to your child's taste.  Store in a mason jar in the fridge for 1 day.  After 1 day, it will get a bit thinner.  You can remix in the blender with some ice cubes or more frozen banana (can't get enough, I tell you) if you have some leftover.


Pour it in your child's favorite mug for a healthy anytime snack!  Chocolate goodness!
